Job Description Please note that this is not an exhaustive list of everything that needs to be done. NH Maldives Kuda Rah & Minor Hotels employees always find new ways to look after the business, their guests, and their colleagues. Within this, the key responsibilities for this position are: Carry out daily pastry and bakery production within the pastry kitchen, ensuring smooth, safe and efficient operations in line with resort standards. Support the Pastry Chef in developing dessert menus, amenity items, buffet displays and special occasion cakes. Remain familiar with available local ingredients and recommend seasonal pastry and dessert offerings. Prepare and present desserts, breads, viennoiserie and sweet items according to brand recipes and presentation standards to ensure consistent quality for guests. Continuously suggest improvements in taste, presentation and creativity. Maintain strict food safety and hygiene standards at all times. Ensure proper labeling, dating, storage and rotation of all pastry ingredients and finished products. Ensure safe handling and proper use of all pastry equipment including ovens, mixers, refrigerators and small tools. Take responsibility for the care and maintenance of pastry kitchen equipment, utensils and work areas. Participate in training sessions and continuously develop pastry skills while supporting junior team members with guidance when required. Maintain good working relationships with kitchen, stewarding and service teams through clear communication and cooperation. Follow and maintain pastry production checklists, cleaning schedules and preparation plans. Keep pastry preparation areas clean, organized and sanitized at all times. Assist in buffet setup, dessert displays and special events as required by the operation. Qualifications Certificate or Diploma in Culinary Arts or Patisserie from a recognized institution relevant to the position. Minimum 1–2 years experience in a pastry or bakery section within a hotel or resort kitchen, preferably currently working in a similar role. Solid knowledge of baking, desserts, breads and pastry production techniques. Understanding and application of food safety, hygiene and HACCP standards. Familiar with operating pastry equipment such as ovens, mixers, proofers and blast chillers. Ability to follow recipes, measurements and presentation standards accurately and consistently. Experience in buffet and à la carte dessert service is an advantage. Fluent in English, both written and verbal, sufficient for kitchen communication and safety requirements. Effective time management and ability to work under pressure in a fast-paced environment. Ability to work collaboratively within a team and maintain positive working relationships. Flexible to work shifts, weekends and public holidays as required by resort operations. Verifiable employment references supporting relevant experience in the applied role.
