POSITION SUMMARY:

The Bakery Manager is responsible for oversight of the entire Bakery Department, including its personnel; the production and purchasing of high quality baked goods and their merchandising; the maintenance of the highest food safety and cleanliness standards; and achieving weekly labor budget, profit margin, and waste control guidelines. This is a supervisory position. This position has hiring and firing responsibilities.

Essential Duties & Responsibilities:

  • Prioritize and delegate daily, weekly, and monthly tasks to staff as appropriate and ensure that staff understands performance expectations, including performance and production goals.
  • Schedule staff according to department’s operational needs.
  • Generate production schedule for all Bakery products, including product triggers and PARs.
  • Package, cost, price, and provide approved signage for Bakery & Vendor Bread items.
  • Oversee staff in proper food preparation techniques, proper food storage guidelines, proper sanitation and safety regulations; and proper and safe operation of applicable kitchen equipment and utensils.
  • Place timely orders for necessary products and supplies.
  • Receive and check orders, submit invoices, and manage credits/returns.
  • Craft recipes that balance tradition with innovation, highlighting wholesome ingredients and current food trends.
  • Plan and execute seasonal menu items.
  • Ensure product is at correct price point for the overall margin goal.
  • Ensure products are stocked and merchandised in compliance with company standards, and follow a first-in, first-out (FIFO) protocol.
  • Maintain a sanitary and organized kitchen production area, according to all governing codes, guidelines, and regulations.
  • Maintain appropriate inventory levels.
  • Maintain orderly and clean backstock/freezer area.
  • Merchandise Bakery table, bread shelves, and other bakery item displays throughout the store.
  • Determine appropriate items for sale cycles and submit them to Chief Marketing Officer by the deadline.
  • Coordinate with the Chief Marketing Officer for product demos, sampling, and social media promotions.
  • Manage vendor relationships in a professional manner.
  • Attend local food shows as requested by supervisor and place purchase orders for product on show deals.
  • Perform timely evaluations, discipline, and coaching.
  • Perform regular department meetings and participate in kitchen meetings, as needed.
  • Attend manager meetings.
  • Maintain regular, predictable, and punctual attendance for scheduled shifts.
  • Comply with and enforce Company policies and procedures.

Other Responsibilities & Duties:

  • Answer store phone calls.
  • Ensure follow-up of department phone calls, messages, and emails..
  • Assist customers throughout other departments.
  • Occasionally assist other departments if needed.
  • Follow-up on customer requests as designated.
  • Perform other job-related duties as assigned by Upper Management.

Required Qualifications & Skills:

  • Good communication skills, both oral and written.
  • Professional pastry and cake-decorating experience.

  • Must have 2-3 years of management experience in a production kitchen environment (e.g. catering; restaurant; food service)
  • Ability to train new personnel.
  • Ability to generate turns and product movement.
  • Ability to optimize product mix for profit margin overall program diversity.
  • Ability to process invoices and returns.

Physical Requirements & Other Considerations:

  • Ability to lift up to 50 lbs.
  • Working conditions include a fast-paced retail environment that involves frequent standing, crouching, and reaching while moving product. Frequent exposure to extreme cold (coolers and freezers), and heat (cooking equipment) for extended periods of time. Occasional outdoor work is required; occasional exposure to seasonal Michigan weather.
