Responsibilities
  • Ensures high quality food preparation and dining experiences for all levels of care. Includes effective menu planning, procurement, inventory management, nutrition education and the ability to effectively integrate and implement these in line with organizational standards.
  • Knowledge of general and therapeutic nutrition related to meal planning in long term care setting. Directs the development of the menu program, diet extensions and production information through the nutrition, culinary and dining departments.
  • Oversees local, state, and federal sanitation and HACCP regulations managed by the assistant director of culinary services; Pennsylvania liquor law/regulation for CCRC liquor license through the license owner, assistant director of RL dining services; compliance with DOH regulations through the assistant director of HCC dining services.
  • Develops and implements effective food safety programs to educate, train and ensure all staff meets guidelines.
  • Responsible for managing the overall process for interviewing, hiring, onboarding, orientation/training, assignments, schedules, and supervision of department staff, directly and through the food services administration office and leadership team. Maintains a system for performance appraisal in conjunction with the Human Resources Department. Conducts performance evaluations and initiates and/or approves personnel actions withing these departments such as promotions, transfers, disciplinary action, and termination.
  • Reviews, evaluates, approves, and monitors work schedules, work hours, and assignments of staff. Promotes good employee relations and solves department problems. Develops and maintains job descriptions for department personnel.
  • Oversees the development of revenue generating programs in campus dining, catering, gift shop, and farm market operations.
  • Leads the Food Services Department Quality Improvement programs to implement, improve or strengthen existing; exploring lower cost/higher quality, programmed operations, and improvement to or to strengthen consistency of program standards. Benchmark with other Masonic Village facilities.
  • Maintains professional affiliations and enhances professional growth and development to keep abreast of latest trends. Serve on professional organizations as the Masonic Village’s representative.
