Description Position Summary: The Dishwasher / Prep Cook is a vital member of the kitchen team, responsible for maintaining cleanliness and sanitation of all kitchenware and equipment while also assisting with the preparation of food items according to recipes and established standards. This dual-role position supports both dishwashing operations and culinary prep efforts, helping ensure efficient kitchen service, food safety, and exceptional guest experiences. Dishwashing Responsibilities: Load, operate, and unload the dish machine to clean tableware, pots, pans, and cooking utensils. Maintain cleanliness and functionality of the dish machine and report any issues to management immediately. Hand-wash delicate or large items as required. Monitor and maintain proper water temperature and detergent levels for sanitation. Keep the dish room clean, safe, and organized. Remove trash, recycling, and food waste from dish and prep areas according to schedule. Replenish cleaning supplies and chemicals as needed. Prep Cook Responsibilities: Prepare assigned food items according to prep lists, par levels, and standard recipes. Properly measure, weigh, and portion ingredients; use a scale for accuracy where required. Cut and portion meats, poultry, and seafood as needed. Follow FIFO (First In, First Out) product rotation to maintain freshness and reduce waste. Maintain cleanliness and organization of walk-ins, reach-ins, drawers, prep stations, and dry storage areas. Stock and restock line stations according to kitchen specs. Adhere to all food safety and temperature guidelines. Accept or reject food products based on quality and safety standards. Minimize food waste through proper prep and handling procedures. General Responsibilities: Communicate effectively with BOH and FOH team members and management regarding prep status and product availability. Support team efforts to ensure smooth kitchen operations and excellent guest service. Follow all hotel and departmental policies and procedures. Perform other duties as assigned by management. Qualifications: Previous experience in a full-service restaurant kitchen preferred. Strong organizational skills and ability to adapt in a fast-paced environment. Ability to work effectively as part of a team and communicate clearly. Must be eligible to work in the United States.
