General Harvest Restaurants (Vendemmia, Autumn, Raccolto, Haerfest, Eldr, GH Pasta & Pizza., East Anchor Seafood) is looking for a talented chef to join our team at Raccolto in West Seattle. We are a cook-from-scratch kitchen showcasing house-made pastas, and familiar starters using seasonal ingredients sourced from the bountiful Pacific Northwest paired. Along side our delicious food we will offer a seasonal cocktail program, beer and wine. Our dining room and bar offers an inviting space for families and foodies alike.As a chef you are expected to:
- Hire & Terminate (with approval and guidance from upper G.H leadership) of back of house team
- Create high morale and culture of the restaurant
- Ensure month over month growth
- Ensure all food orders are placed on time and correctly
- Train and coach BOH restaurant team
- Respond to positive/negative guest feedback
- Run the kitchen during 5 dinner services per week
- The expectation is that the chef works in the kitchen for dinner service 5 days per week.
- Maintain a high and positive presence during business hours
- Keep a clean and organized kitchen
- Uphold the employee handbook
- Write and post the kitchen (with in/out times) schedule at least 2 weeks in advance
- Coach and grow the BOH team
- Weekly manager meetings
- Make sure family meal is put up every night
- Track food cost with Microsoft excel (Available on the restaurant computer)
- Review all food invoices prior to submitting to office
- Be an ambassador for the entire General Harvest brand
- Achieve metrics: 17.5% BOH labor | 24% food cost

Salary Details:
- $80,000 base pay + $5,000 1st year signing bonus (paid quarterly) = $85,000 first year pre bonus potential
- Bonus potentials
——Based on restaurant profits paid monthly
- 8% manager receives $500
- 10% manager receives $750
- 18% manager receives $1000
- 1st year base with 8% profit bonus: $91,000
- 1st year base with 10% profit bonus: $94,000
- 1st year base with 18% profit bonus: $98,000

Qualified applicants will:

  • Have a min of 3+ years experience running a kitchen, with ability to hit target expectations of food cost and labor costs.
  • Proven track record of success in menu development, costings, and rollouts
  • Great product knowledge in food, wine and spirits
  • Be a strong team member who works well with others
  • Have strong communication skills
