SKILLS AND EXPERIENCE

  • Formal qualifications in Commercial Cookery are essential, ideally Certificate IV in Commercial Cookery
  • Experience in the Aged Care environment is desirable
  • Previous experience in leading a team is desirable
  • Possesses good verbal and written communication skills
  • Strong interpersonal skills and a customer service focus
  • Possesses comprehensive computer knowledge (Microsoft Word and Microsoft Excel) or be required to use a computer on a regular basis

Responsibilities

JOB PURPOSE

To lead a high functioning kitchen and catering service through the provision of quality, well presented, nutritious meals that meet Resident dining preferences and needs in a home like environment.
In addition to overseeing the kitchen and catering services at the Executive Chef’s care home base, the Executive Chef will support a cluster of 2-3 neighbouring care homes seeking continuous improvement opportunities and coaching & mentoring Chef Managers & catering terms in areas including but not limited to food quality & presentation, food cost management, operational efficiencies and food safety compliance.

DUTIES

  • Effectively lead the Catering function of the Care Home, ensuring the catering service is delivered to the highest of standards
  • Oversee and directly manage all Catering Assistants
  • Implement infection control principles and practices as per infection control policies
  • Document and communicate team and individual performance expectations periodically and otherwise provide regular coaching and feedback
  • Manage the performance of rostered staff in accordance with scope of practice, position descriptions, qualifications and roles and responsibilities
  • Identify training needs and requirements of Catering function - this includes changes to processes or resident requirements, introduction to new equipment, safety or regulations
  • Partake and lead continuous improvement activities associated with the Care Home dining experience, engaging with Residents, Care home leadership and Regional Hospitality teams for feedback
  • Ensuring residents are provided ample food and fluids to meet their nutritional requirements; appropriately planning modified, special diets and assistive devices to enhance the president’s ability to meet their nutritional and hydration needs in consultation with Clinical Care Managers and Registered Nurses.
