INTRODUCTION:

Daydream Island Resort & Living Reef is located in the heart of Queensland’s Whitsunday Islands and the gateway to the World Heritage-listed Great Barrier Reef. With stunning views out to the impossibly blue waters of the Whitsundays, it is the perfect place to immerse yourself in the natural beauty of the island.
The island is one of the closest Whitsunday islands to the mainland (Airlie Beach) with spectacular 30-minute ferry ride to work each day.

DESCRIPTION:

We are seeking experienced, qualified Exec Sous Chef with a passion for food & great leadership skills in a busy fast paced resort Kitchen. You will have the opportunity to showcase your creativity, whilst interacting with our guests, staff and lead a team of chefs to produce quality food and great service.
This is a full-time role which include accommodation and meals you will be fully immersed in ensuring guests consistently receive a memorable dining experience.

With three restaurants, six bars, conference and events centre and exciting new changes for the property we are looking for an Exec sous chef to join and lead our kitchen team at Daydream Island.

  • Responsible for a dynamic menu design & assist in developing overall operating concepts and themes of all outlets
  • Providing exceptional guest food experience in all restaurants
  • Implement positive change for operational improvements and efficiencies.
  • Work & lead the team in the kitchen to ensure food, preparation, and presentation standards are established, monitored, and maintained.
  • Work closely with the kitchen and food and beverage departments to ensure the best possible outcome for our guests.
  • Formulate, implement and monitor a strategic business plan and budget for all your restaurants
  • Complete all administration tasks - rosters / forecasts / overhead costs / pricing costs of goods / managing food orders weekly with purchasing manager.

SKILLS AND EXPERIENCES:

  • Minimum of 2 years’ experience as a Exec Sous Chef or 3 years as a Senior Chef role – preferred experience in Hotel & Resort kitchens
  • Passionate & a deep technical understanding about all aspects of cooking.
  • Enjoy being innovative in their menu development and food presentation.
  • Experience in leading, training and developing skills in all chefs to further develop careers in the kitchen.
  • Excellent guest relations & a positive working environment
  • Strong financial acumen relevant to labour and cost control
  • The ability to work autonomously whilst being a strong perceptive leader.
  • Must be eligible to work in Australia.
