Description

The Executive Sous Chef (Multi Room) will directly oversee the operation of the (seasonal) Palms Pool, In- Room Delivery, and Palms Pizza kitchen(s) in conjunction with other Departmental Management to direct the performance of chefs, cooks, and other kitchen staff. Responsible for the quality assurance of all finished products of the venue and the supervision of all food productions ensuring all company specifications and standards are satisfied.

Core Job Responsibilities:

  • Communicates and works closely with property management to ensure a quality Team Member and guest experience.
  • Responsible for maintaining a consistently high level of food quality and internal and external guest service.
  • Maintain cleanliness and all SNHD regulation of all back/front of the house areas.
  • Prepare menu and special items along with recipes according to production and quality standards.
  • Assign and monitor food production needs to Team Member and ensure production needs are met as required by customer flow.
  • Assist with placing daily requisitions, rotation and storing of items.
  • Must be able to write, input and direct recipes for all menu items in their kitchen that are productive, practical and profitable.
  • Document all menu changes, temperatures, and meeting information.
  • Provide a safe and engaging environment, which follows all Union and Palms Casino standards.

Qualifications:

  • Must have a minimum 3-year experience within a QSR and restaurant culinary food service.
  • Must 3 years in a Sous Chef or Room Chef role.
  • Must adapt to different personalities of clients, vendors, and coworkers without losing focus.
  • Must be proficient in expediting food orders, menu development and product resourcing.
  • Must have working knowledge of dough and/or pizza making techniques.
  • Must possess high professional ethics and avoid extreme familiarity or conflicts with others.
  • Understands measurements of liquid and weight temperatures.
  • Must have a valid Southern Nevada Health District Health Card.
  • Available to work flexible schedule including nights, weekends and holidays, etc.
  • Must be at least 21 years of age.
  • Other duties as assigned.

Physical Demands:

  • Work is performed in a casino / hotel setting.
  • Must be tolerant to varying conditions of noise level, temperature, illumination, and air quality.
  • May be exposed to smoke
  • The noise level in the work environment is usually moderate to loud.
  • Constant contact with executives, department management, Team Members, and guests.
  • Prolonged sitting or standing and mobility.
  • Balancing, stooping, kneeling, crouching, reaching, pushing, pulling, lifting, grasping, talking, hearing, repetitive motions Lift, carry, push, pull or otherwise move objects and/or move up to 50 pounds occasionally.
  • Eye/hand coordination.
  • Use of standard office equipment.
  • Ability and availability to work extended hours and variable schedule days and times
  • Ability to distinguish letters, numbers, and symbols.
