Responsibilities

ABOUT THE ROLESEXECUTIVE SOUS CHEF (AM)

  • Shift: Early morning through lunch (typically 5:30am – 3:00pm)
  • Oversees all morning prep, breakfast, VIP brunch, and lunch service.
  • Manages AM kitchen team, ensures mise en place is ready for the next two days (except proteins/perishables, prepped same day).
  • Leads vendor receiving, inventory, and morning cleaning standards.
  • Trains cooks, enforces food safety, and supports menu innovation.
  • Engages with guests and participates in community outreach as a Fiamma ambassador.

KEY RESPONSIBILITIES (BOTH ROLES)

  • Supervise and mentor kitchen staff on your shift.
  • Manage prep, service, and storage in a boutique kitchen environment.
  • Maintain strict food safety, sanitation, and cleanliness standards.
  • Collaborate with the Executive Chef and FOH on menu, events, and guest experience.
  • Actively participate in guest engagement, local marketing, and community events.
  • Monitor inventory and assist with vendor relationships.
  • Support onboarding and training for new kitchen team members.
