Expression of Interest – Defence Chefs Ventia is a leading provider of essential infrastructure services across Australia and New Zealand, proudly supporting the New Zealand Defence Force through integrated Living and Working Services, including Hospitality and Catering, Cleaning, Accommodation Management and Laundry. As part of upcoming Defence opportunities across New Zealand, Ventia is seeking Expressions of Interest from experienced Chefs who may be interested in joining our Defence Hospitality and Catering teams, pending contract awards and any employment relations requirements for existing employees. These roles support Defence bases and training environments and play a critical part in delivering safe, high-quality, and reliable catering services that enable Defence personnel to focus on their operational objectives. What’s on offer As a Defence Chef, you will support day-to-day kitchen operations within a disciplined, high‑volume catering environment. You’ll be responsible for food preparation and service across a range of dining styles including mess dining, buffet, field catering support, and special functions, while maintaining strict food safety, hygiene, and compliance standards. You’ll work closely with the Site Hospitality Manager and kitchen team to ensure operational readiness, stock control, quality output, and a strong safety-first culture. Locations: Auckland, Manawatū (Ohakea), Waiouru, Wellington (Trentham), Woodbourne / Marlborough, Christchurch (Burnham) About the role Preparation and service of high-quality meals in line with Defence and Ventia standards Ensuring all food safety, cleaning, and hygiene requirements are met Maintaining daily mise en place and supporting smooth service delivery Supporting stock control, waste minimisation, and inventory processes Operating commercial kitchen equipment safely and effectively Mentoring and supporting Cooks and Kitchen Hands Promoting a strong safety culture and compliance with SHEQ requirements About you We are interested in hearing from Chefs who can demonstrate: New Zealand recognised Certificate III in Commercial Cookery (or equivalent) Experience in a large commercial or institutional kitchen Strong knowledge of food safety, hygiene, and quality standards Ability to work effectively in a structured, process-driven environment Excellent time management and organisational skills A positive, team-focused attitude with a commitment to safety and service excellence To note, all roles on Defence contracts require applicants to be New Zealand citizens or to hold a valid New Zealand Resident Class Visa.
