Summary
Directs and organizes the activities of the Pool Club Food & Beverage departments, including but not limited to the Restaurants, In-Room Dining, and Bars, to maintain high standards of food and beverage quality, service, and marketing to maximize profits through outstanding customer service. Focuses on initial and ongoing training and development of managers and team members.Ensure the highest quality of food, beverage, dining and service at the most reasonable and competitive price and cost.The successful candidate will have impeccable professional references for exceptional leadership and communication skills, cutting edge technical knowledge, and experience in hospitality at a luxury level.
Essential Functions

Job duties include, although are not limited to:

  • Hire, train, supervise and schedule food and beverage staff/management in accordance with business needs, productivity, service standards and The Boca Raton Hotels policies and procedures.
  • Develop menus and food and beverage marketing strategies in tandem with the director; implement new menus and promotions, such as holiday and special event promotions.
  • Observe food and beverage outlet operations and take needed action to ensure all standards are being met. Taste test food and beverage products for consistency.
  • Respond to guest inquiries and coordinate special arrangements and requests in food and beverage outlets.
  • Assist outlet managers in coordinating services from other departments, i.e.: maintaining adequate stock of linen.
  • Utilize computer equipment to analyze forecast, cost, and revenue reports and make decisions based on that information to ensure profit maximization.

Internal Relationships
Reports to the General Manager. The Director of Food & Beverage supervises all Restaurant Managers, Supervisors and Non-Exempt team members as required. The Director of Food & Beverage works closely with the President/CEO, General Manager, Executive Chef and management team.
External Relationships
Purveyors, off-site musical talent, audio visual suppliers, production company representatives meeting planners, travel writers, restaurant association representatives, Resort guests and Club Members.

Qualifications

  • Thorough knowledge of food and beverage operations including foods, beverages, supervisory aspects, service techniques, and guest interaction.
  • Considerable skill in math and algebraic equations using percentages.
  • Ability to walk, stand, and/or bend continuously to perform essential job functions.
  • Ability to communicate in English, both orally and in writing, with guests and employees, some of whom will require high levels of patience, tact, and diplomacy to defuse anger and to collect accurate information and to resolve problems.
  • Ability to work under pressure and deal with stressful situations during busy periods.
  • Ability to access and accurately input information using a moderately complex computer system.

Education/Experience Requirements

  • Bachelor’s degree Preferred.
  • A minimum of 2 to 5 years of work experience that can be demonstrated to be applicable to the duties listed in the job description. Experience in the hospitality and/or development industry is preferred.

Physical Requirements
Most work tasks are performed indoors and outdoors. Position requires walking and giving direction most of the working day. Must be able to exert well-paced ability to maneuver between functions occurring simultaneously. Requires grasping, writing, standing, sitting, walking, repetitive motions, bending, climbing, listening and hearing ability and visual acuity. Must be able to lift trays of food or food items weighing up to 30 lbs. frequently. Must be able to push and pull carts and equipment weighing up to 250 lbs. occasionally.
