SUPERVISOR/MANAGER

Operations Manager

MAIN DUTIES/RESPONSIBILITIES

  • Organise and control the property's restaurant, dining, bar and in-room dining operations.
  • Plan food and beverage service requirements for breakfast, lunch and dinner in line with occupancy, guest demand and external patronage.
  • Select, train, roster and supervise food and beverage supervisors, wait staff, bartenders and other front-of-house personnel.
  • Consult with the Head Chef and kitchen team regarding menus, service volumes, dietary requirements, specials and functions.
  • Monitor food and beverage service standards and resolve customer complaints and service issues.
  • Arrange purchasing and monitor beverage, service and front-of-house stock levels, wastage, pricing and inventory controls.
  • Oversee reservations, table allocations, room-service coordination and communication between front-of-house, bar and kitchen teams.
  • Ensure dining, bar and service areas comply with food-safety, liquor, responsible service, WHS and presentation requirements.
  • Monitor sales, labour utilisation and other operational indicators and provide reports to senior management.
  • Coordinate functions, group dining and other special food and beverage requirements where offered by the property.

SKILLS & EXPERIENCE

Qualifications: Relevant diploma or higher qualification in hospitality/restaurant management.

Experience: At least 1-3 year of experience managing or supervising a restaurant, hotel food and beverage department, bistro or comparable operation.
