As a Lab Coordinator & Sanitary Responsible, you will ensure regulatory compliance with COFEPRIS as the authorized sanitary officer, while coordinating the Sweet & Savoury creation laboratories, promoting team development and operational excellence. You will report to the Flavors Creation Manager and be based in our San Angel site, working in an on site model. Responsibilities Be the authorized sanitary officer before COFEPRIS, ensuring full compliance with all applicable regulations. Manage the activities of assistants and interns in the Sweet & Savoury creation laboratories. Ensure that laboratory practices meet established safety, hygiene, and quality standards. Support internal and external audit processes related to quality and regulatory standards. Participate in the planning and follow-up of technical and regulatory certifications. Collaborate with the development, quality, and regulatory affairs teams to maintain efficient and compliant processes. Promote continuous improvement and foster technical training and growth within the team. Your professional profile requires Bachelor's degree or Engineering in Chemistry, Pharmacy, Biochemistry, or a related field. Valid professional license (manda,tory requirement for registration with COFEPRIS). Education or experience in sanitary regulation, quality control, or food product development. Desired experience 3–5 years coordinating teams and laboratory operations. Knowledge of quality standards, good laboratory practices, and audit processes (GMP, ISO).
