Come on in and check them out! Job Description At Mercure Melbourne Doncaster, our Food & Beverage is where hospitality comes alive. We are seeking a passionate Food & Beverage Manager with proven experience in F&B operations to lead our team and oversee day-to-day services, delivering seamless and memorable guest experiences. Reporting to the General Manager, this is a fantastic opportunity for an experienced F&B professional to take on a leadership role overseeing F&B operations. Key Responsibilities Lead and manage Food & Beverage operations across the hotel. Ensure all services meet Mercure’s high standards of hospitality and guest experience. Work closely with the Executive Chef and F&B Operations team to deliver exceptional menus, service, and execution. Inspire and develop the team, fostering a culture of excellence, engagement, and accountability. Oversee budgeting, P&L, inventory, and operational efficiency to drive performance. Analyse guest feedback, market trends, and competitor insights to improve experiences. Collaborate with Marketing to promote the hotel’s F&B offering. Ensure compliance with, health & safety, and licensing requirements. Build strong relationships with suppliers, partners, and the local community Qualifications Proven experience in Food & Beverage management. Strong knowledge of high-volume operations, banquets, and multi-outlet service. Inspirational leadership style that builds engagement, accountability, and team pride. Experience managing labour, stock, revenue, and service performance. Passion for food, wine, and delivering great guest experiences. Excellent communication, organisational, and stakeholder management skills. Full working rights in Australia are required – no sponsorship available.
