Food & Beverage Manager

Location: St James Hotel

Salary: £27,768.00

Hours: Full-time, 40 hours including evenings and weekends as required

The Role

We are looking for an experienced, enthusiastic and hands-on Food & Beverage Manager to lead our Food & Beverage operation.

This is a key management position with responsibility for the successful day-to-day running of our restaurant, Pepys Bar and conference & banqueting operations, ensuring consistently high standards of service while developing a motivated, knowledgeable and commercially focused team.

We are looking for someone who is comfortable being visible within the operation, leading from the front and taking ownership. You will work closely with Kitchen team and other Heads of Department to deliver an excellent guest experience while ensuring the department operates efficiently and profitably.

Key Responsibilities

You will be responsible for:

  • Leading the day-to-day Food & Beverage operation across the restaurant, bar and conference & banqueting areas.
  • Ensuring consistently high standards of guest service, presentation, cleanliness and hospitality.
  • Leading, motivating, coaching and developing the F&B team, setting clear expectations and maintaining a positive working environment.
  • Managing rotas, staffing levels and productivity in line with business requirements and agreed budgets.
  • Supporting recruitment, induction, training, one-to-ones and performance management within the department.
  • Taking ownership of guest feedback and complaints, ensuring issues are handled professionally and opportunities for service recovery and improvement are identified.
  • Driving sales through strong product knowledge, upselling, promotions and an engaged, commercially aware team.
  • Monitoring departmental costs, stock levels, ordering, wastage and monthly stocktakes.
  • Maintaining strong financial awareness and understanding how the F&B operation contributes to the hotel's overall profitability.
  • Ensuring effective controls are maintained across the bar operation, including liquor stock, licensing requirements and appropriate operating procedures.
  • Overseeing the successful delivery of functions, events and banqueting operations.
  • Ensuring all Food Safety, Health & Safety, COSHH, licensing and other statutory requirements are consistently followed.
  • Working collaboratively with the Kitchen and other hotel departments to ensure smooth communication and an excellent overall guest experience.
  • Carrying out Duty Manager responsibilities when required.
  • Identifying opportunities to improve service, efficiency, sales and the overall Food & Beverage offering.

What We're Looking For

We are looking for someone with previous Food & Beverage management or strong supervisory experience, ideally within a hotel, restaurant, bar or hospitality environment.

You will need to be a confident people manager who can balance excellent customer service with the commercial and operational demands of running a busy department.

You should be:

  • Passionate about hospitality and delivering excellent guest experiences.
  • Confident managing and developing a diverse team.
  • Organised and able to manage competing priorities in a busy environment.
  • Commercially aware, with an understanding of labour costs, stock control, wastage and departmental profitability.
  • Comfortable managing restaurant, bar and function operations.
  • Confident handling guest feedback and resolving problems.
  • A clear and professional communicator.
  • Able to remain calm and make effective decisions under pressure.
  • Proactive, adaptable and willing to challenge existing ways of working when improvements can be made.
