The Food and Beverage Manager role is located on the ground floor and level 1 of the eccentric Ace Hotel, just a brief 10-minute walk from Central Station.

Good Chemistry - Is a breathtaking day-to-night cafe, which yields delicious specialty barista coffee from Mecca, tasty sweets and divine savory items by day, before transforming into an intimate bar nightly.
Loam - Our full-table service restaurant has 65 seats, serving breakfast, lunch and dinner seven days a week with dishes encouraged to share. Here the kitchen team creates masterpieces incorporating seasonal delights with a particular emphasis on veggies as ingredients are sourced from independent farmers & producers.

Responsibilities

This role will orchestrate and oversee all aspects of operations on the ground floor within the Food & Beverage division including the restaurant LOAM, the Lobby Bar, Good Chemistry cafe and our 3 diverse event spaces- all making a pop on the Sydney culinary map!
This position is primarily responsible for the food and beverage supply ordering and costing, staff rostering, operational costs, service initiatives, revenue, HR and safety compliance, ensuring records of transactions are up to date and communicated with the Director of Food & Beverage.
Most importantly, this role will train and manage the front of the house staff ensuring they know everything from menus to service standards. Directly supervise the front of house venue, ensure safety compliance with WHS standards, and the output of high-quality culinary and beverages is held up to Ace standards. You will work closely with the Executive Chef, by providing valuable feedback to the culinary team from customers and collaborating on alternative means and menu items that would benefit the business’s cost productivity based on the needs of the patrons.
