REQUIREMENTS:

• A Minimum of 2 years experience at Manager level in a 4* Hotel
• Possess Strong Leadership qualities
• Excellent communication, organisation & people management skills
• Ability to train new & existing staff
• Have an excellent knowledge of Food and Beverage & a strong eye for detail
• Possess the ability to perform under pressure
• Fluent in spoken & written English
• Availability to work 5 over 7 days for both opening and closing shifts
• A strong level of HACCP
• Knowledge of Budgeting and Rostering

JOB PURPOSE:

To ensure the smooth and efficient running of the food & beverage operations and to promote a positive image to both customer and colleagues in relation to service and quality of food and beverages

MAIN RESPONSIBILITIES:

• Day to day running of the Food & Beverage Outlets
• Take control and responsibility for the Waterfront Bar & Brasserie, L’Escale Restaurant, 52 @ The Bay and Room Service.
• Take every opportunity to maximize revenue.
• Lead a team of Managers, Assistant Managers, Food & Beverage Supervisors and Food & Beverage Assistants to ensure the highest levels of Customer Care are practiced at all times.
• To assist and carry out training as required and to document the same.
• To be responsible for the day to day queries, complaints, and issues that arise in the Bar, Brasserie & Restaurant.
• To ensure cash/vouchers and all forms of payment are handled in a secure and responsible manner.
• To deal with all complaints in a courteous and efficient manner and inform the senior manager.
• Attend the weekly Head’s of Department meetings
• Assist with recruitment and selection for Food & Beverage outlets
• Assist Managers with Performance Management
• Management of Weekly Rosters
• Maintain and audit hygiene levels
• Maintain and audit food quality levels with Executive Head Chef
• To ensure that reasonable care is taken for the Health and Safety of yourself, other employees, guests and any other persons on the Hotel premises.
• To report and where possible, take action on incidents of accidents, fire, loss or damage.
• To carry out all Managerial duties as per the agreed standards.
  Your normal working week will be 5 days over a 7-day roster. The weekly roster includes weekend work.
