Mettre à jour les procédures internes en fonction des évolutions réglementaires. Réaliser des audits réguliers des zones de production, stockage et service. 2. Contrôle & Suivi Opérationnel Vérifier la traçabilité des produits alimentaires. Contrôler les températures, dates de péremption et conditions de stockage. Surveiller la propreté des équipements, ustensiles et surfaces de travail. Identifier les risques potentiels et mettre en place des actions correctives. 3. Formation & Sensibilisation Former les équipes cuisine, service et stewarding aux bonnes pratiques d’hygiène. Organiser des sessions de recyclage régulières. Sensibiliser le personnel à la prévention des contaminations croisées. 4. Documentation & Reporting Tenir à jour les registres HACCP, fiches de contrôle et rapports d’audit. Préparer les documents nécessaires pour les inspections internes et externes. Rédiger des rapports d’incidents et proposer des plans d’amélioration. 5. Gestion des Incidents Intervenir en cas de non-conformité ou d’alerte sanitaire. Coordonner les actions correctives avec les chefs de service. Assurer le suivi jusqu’à résolution complète. Qualifications Diplôme en sécurité alimentaire, microbiologie, nutrition, restauration ou domaine connexe. Certification HACCP (niveau 3 ou 4 recommandé). Expérience préalable en hôtellerie, restauration ou industrie agroalimentaire.
