Job Description The Food Safety Officer is responsible for ensuring full compliance with food safety, hygiene, and sanitation standards across all food production and service areas in Radisson Hotel Brunei. The role safeguards guest health, protects brand reputation, and ensures adherence to local regulations and Radisson Hotel Group standards. Food Safety & Compliance Ensure full compliance with local food safety regulations and health authority requirements. Monitor adherence to HACCP (Hazard Analysis and Critical Control Points) procedures. Conduct routine hygiene inspections of kitchens, food storage areas, and food service outlets. Ensure proper food storage temperatures and labeling practices are maintained. Monitor expiry dates, FIFO (First In, First Out) practices, and food segregation standards. Ensure all food handlers maintain valid medical certificates (if required by law) Hygiene Monitoring & Audits Conduct daily hygiene and sanitation checks across all food production areas. Maintain food safety logs including temperature records, cleaning schedules, and pest control reports. Prepare audit reports and follow up on corrective actions. Support internal and external food safety audits. Training & Awareness Conduct food hygiene training for kitchen and F&B staff. Educate employees on proper hand hygiene, cross-contamination prevention, and safe food handling. Support onboarding of new kitchen staff with food safety orientation. Sanitation & Cleaning Oversight Ensure cleaning schedules are strictly followed and documented. Monitor use of approved cleaning chemicals and proper dilution. Coordinate with pest control vendors and ensure preventive measures are in place. Investigate and report any food contamination incidents immediately. Documentation & Reporting Maintain accurate food safety documentation and inspection records. Report non-compliance issues to Executive Chef / Management. Track corrective actions and ensure timely closure. Qualifications Diploma or Certificate in Food Safety, Environmental Health, or related field. Certified in Food Hygiene / HACCP (mandatory). Minimum 1–3 years of experience in food safety, preferably in hotel or large-scale kitchen operations. Strong knowledge of local food safety regulations. Good documentation and reporting skills.
