2ND SHIFT SCHEDULE: MONDAY-FRIDAY 2:30-11:30PM

This role is scheduled Monday through Friday, 5:30 AM to 2:30 PM, with an additional shift on either Saturday or Sunday, depending on the weekly production needs. Please note: this is a six-day work week, and any hours worked over 40 per week will be paid at time and a half (1.5x your regular rate) in line with overtime laws.

JOB SUMMARY:

The Food Safety & Quality Technician is responsible for ensuring that all red meat processing operations meet company and regulatory food safety and quality standards. This role works hands-on in the production environment, inspecting raw and finished meat products, verifying sanitation procedures, and ensuring adherence to USDA, HACCP, GMP, and company SOPs.

QUALIFICATIONS:

  • High school diploma or GED required; associate or bachelor’s degree in Food Science or related field preferred.
  • 1+ years experience in food manufacturing or meat processing preferred.
  • Knowledge of HACCP, USDA guidelines, and GMPs required.
  • Strong attention to detail and ability to work in cold, fast-paced environments.
  • Must be comfortable working with raw meat and around heavy processing equipment.
  • Basic computer and documentation skills (Microsoft Office, data entry systems).
  • Ability to communicate effectively with production and QA teams.

Responsibilities
  • Monitor and verify production activities in the red meat processing areas to ensure compliance with HACCP, GMPs, SSOPs, and USDA regulations.
  • Conduct routine pre-operational and operational inspections of processing equipment and facilities to verify cleanliness and sanitary conditions.
  • Inspect incoming raw materials, in-process product, and finished goods for quality, temperature, and labeling accuracy.
  • Document and report deviations, non-conformances, or potential food safety risks to supervisors and QA management.
  • Assist in root cause investigations and corrective actions for product holds, customer complaints, or USDA NR (noncompliance record) responses.
  • Collect and prepare product samples for microbial or laboratory testing.
  • Monitor critical control points (CCPs), metal detectors, scales, and label verification systems.
  • Collaborate with production and sanitation teams to support continuous improvement and training efforts.
  • Complete daily paperwork and electronic documentation accurately and in a timely manner.
  • Participate in audits, regulatory inspections, and internal assessments as needed.
