Food Truck Manager – Smashville & Armstrong Barbecue

About the Role
We’re looking for a hands-on hospitality leader to take full control of our food truck operations across Smashville (Nashville Hot Chicken & Burgers) and Armstrong Barbecue (Authentic Texas BBQ). This is a management-level, career role – not a casual kitchen job. You’ll be trusted to run a food truck, lead teams at weddings, corporate events, and festivals, and deliver a premium guest experience that matches two of Victoria’s premium food brands.
What You’ll Do
- Manage day-to-day food truck operations for both brands.- Drive and operate a large food truck (MR licence required or willing to obtain).- Recruit, train, and lead casual staff – giving clear direction and setting standards.- Manage stock, ordering, and daily checks using Restoke software.- Handle cash reconciliations for festivals and street trade (most catering is prepaid).- Take ownership of festival setups, private catering, and corporate events.- Deliver a premium guest experience every time. - Report directly to the Catering Events Manager.
What We’re Looking For
- Strong hospitality leadership experience (fast-paced kitchens, catering, events).- Comfortable managing staff and giving clear direction.- Proven cash handling and reconciliation skills.- Geelong-based (all operations run from Geelong).- Driving experience with large vehicles (preferred) – MR licence or ability to obtain.- Physically fit – able to handle setups, lifting, and occasional long shifts.- Organised, independent, and able to manage your own time.- Takes initiative, makes good decisions under pressure, and keeps standards high.- Ambitious to grow – this role is a pathway to Catering Operations Manager.
