Description Role Overview: The Garde Manger, or Pantry Chef, is a key member of our culinary team responsible for all cold food preparation and presentation. This role is perfect for someone who takes pride in creativity, attention to detail, and maintaining a high standard of food quality, all while working in a collaborative, high-end kitchen environment. Key Responsibilities: Cold Food Production: Prepare and present all cold appetizers, salads, charcuterie, and chilled dishes in alignment with seasonal menus and “unreasonable hospitality” standards. Mise en Place & Organization: Ensure all mise en place is prepared to the highest standard, with ingredients neatly organized and ready for service. Maintain a clean and orderly pantry station. Creativity and Presentation: Design visually appealing plating for cold dishes, incorporating seasonal and local ingredients that reflect our farm-to-table philosophy. Collaboration: Work closely with the rest of the culinary team to ensure seamless service and contribute ideas for new menu items, especially as we prepare for the upcoming season. Quality Control: Monitor the freshness and quality of all cold ingredients, ensuring that every dish meets our exacting standards before it leaves the kitchen. Requirements Proven experience as a Garde Manger or in a similar cold kitchen role. Strong knowledge of cold food preparation techniques and a passion for culinary creativity. Excellent organizational skills and the ability to maintain composure in a fast-paced kitchen environment. A collaborative spirit and a commitment to delivering an exceptional dining experience that aligns with the principles of “unreasonable hospitality.”
