Responsibilities

WHY THIS ROLE?

This is a once in a lifetime opportunity to get stuck into a brand new store opening, work with our
team of bakers and build new relationships with the locals. Our new site in Essex road is
absolutely amazing, an inspiring space to visit for our customers but also an incredible place to
work! This is the perfect role for someone experienced in sourdough baking, with a passion for
leading a great team, driving our business and products to the next level. You will have the
opportunity to use your talent, experience and initiative to have input in shaping the space and
operations of our new site, develop new relationships with local customers, flex your baking skills,
and truly be proud of your creations! Along with the support of our leadership team and the
owners, you will get the chance to make your mark on this wonderful and fast growing business.

KEY RESPONSIBILITIES OF THE ROLE

As our head baker you will be a vital part of our incredible production teams. You will be working
closely with your team of bakers and pastry chefs to ensure that we are baking some incredible
products, the production is running smoothly, the team are motivated and raring to go, and the
quality of our produce is top notch!
You’ll play a role in innovation, new ideas and new menu items. Ideally you would have had at
least 2 years experience in a leadership position in a production environment and have had
several years of practical experience baking sourdough and Viennoiserie in a professional
environment.
For this role, we are looking for a people leader, your top priority will be making sure that your
team feel supported to to their best work. Leading people has to be something that gives you
energy and gets you up in the morning!

YOUR RESPONSIBILITIES INCLUDE:

  • You oversee the production team including bread team pastry team, kitchen porters and chefs.
  • Supervise and evaluate performance of production personnel ensuring the high quality output is

always taking place.

  • You take a leading roll in staff hiring, training and onboarding. Also giving continuous positive

and negative feedback to the team where needed, and facilitate ongoing training opportunities.

  • You are able to give direct feedback and problem solve with everyone involved and are able to

lead the team to take ownership and pride in what they produce.

  • You liaise with other managers to formulate objectives and understand requirements of daily

production. Provide regular updates on key milestones and report to your

  • You are responsible for maintaining consistency and high quality for all of our products ensuring

all products meet established quality standards with rigorous checks, monitoring production to

resolve issues.

  • You should know where everyone is in the production at all parts of the day, and ensure that

they are working efficiently and to the highest quality. You ensure that the team end their shifts

on time and take their lunches where appropriate.

  • You enforce all health and safety regulations and train staff when necessary. Ensure HACCP

management, health and safety protocols, hygiene procedures and task compliance are adhere

too.

  • You create production schedules to ensure products are delivered on time, planning quantities

and tasks (daily, weekly, monthly), organising workflow to meet specifications and deadlines by
allocating resources across workflows to ensure minimum wastage and strengthen profit

margins. Receive handovers from previous day to prepare next day of production.

  • You have a strong grasp of what makes our business profitable and are able to come up with

innovative solutions and ideas that drive our business forward. Offering suggestions for

efficiency improvements as part of the overall business strategy.

  • You determine amount of necessary resources, order the required ones and update stocktake

systems. Oversee the maintenance of production equipment, scheduling regular maintenance

for equipment and approving maintenance work.

  • You keep on top of your share of administrative tasks and record keeping, as well as making

sure your team do the same. Will be floating in production 40% of the day and handling
administrative tasks on the other 60% every day.

  • Have an unwavering determination to make delicious sourdough bread and pastries
  • Have at least three year’s experience of baking in a professional environment and 1-2 years

leading a production team in a senior position.
