Company Description We are opening Melbourne's newest rooftop destination, Cleo Opening this December, Cleo will bring Eastern Mediterranean flavours and old-world cooking techniques to life, set within a new modern space to celebrate every season The rooftop of Hyde Melbourne Place will be transformed with warm tones, long tables, generous spaces for relaxed communal dining and an all-new Mediterranean-inspired food and beverage menu. Job Description We are seeking an experienced and passionate Head Chef to lead the culinary vision and launch our new rooftop restaurant. As Head Chef, you’ll bring creativity, leadership, and a passion for exceptional food while ensuring the highest standards of consistency, presentation and quality. Key Responsibilities: Lead the design, development and execution of Cleo’s Mediterranean-inspired menu, with the support from the Executive Chef Oversee all aspects of kitchen operations, including rostering, ordering and food safety compliance. Manage costs effectively while maintaining exceptional quality. Build, mentor, and inspire a high-performing kitchen team. Champion creativity, seasonality and sustainability in menu planning. Partner with the front of house team to ensure seamless dining experience aligned with Cleo’s brand. Qualifications About You Proven experience as a Head Chef in high-volume, premium dining venues. Strong knowledge of Mediterranean cuisine, techniques, and ingredients. Leadership skills to motivate and train a new team. A passion for creating memorable dining experiences through food. Excellent organisational and financial management skills.
