Job Description As Head Chef, you will lead the end-to-end kitchen operation, driving both culinary excellence and commercial performance in a fast-paced regional environment. This is a hands-on leadership role requiring strong operational discipline, team development capability, and the ability to deliver consistent, high-quality food while managing cost, labour, and compliance. Key responsibilities include: Leading daily kitchen operations across breakfast, lunch, dinner, and functions Designing and executing menus aligned with brand standards and local market demand Driving food quality, presentation, and consistency across all service periods Managing food cost, wastage, stock control, and supplier relationships Leading, coaching, and developing a small kitchen team in a regional setting Ensuring full compliance with food safety, WHS, and Accor brand standards Collaborating with the General Manager on commercial performance, promotions, and guest experience Supporting conference and group business with tailored catering solutions This role is ideal for a chef who thrives in autonomy, enjoys building team capability, and understands the commercial realities of a regional hotel operation. Qualifications To be successful in this role, you will bring a balance of culinary expertise, leadership capability, and commercial awareness: Proven experience as a Head Chef or Senior Sous Chef ready to step up Strong understanding of cost control, rostering, and kitchen financials Demonstrated ability to lead and develop teams, particularly in smaller or regional environments Experience across à la carte, buffet, and function service Solid knowledge of food safety standards and compliance requirements Ability to work independently, take ownership, and drive standards without heavy structure Flexibility and resilience to succeed in a regional location Highly regarded: Experience within hotel or multi-outlet environments Previous experience working in remote or regional locations Understanding of Accor systems and brand standards Additional Information Why Work With Accor?
