Job Description Bacar is a 75-seat, award-winning restaurant and bar located within Pullman at Sydney Olympic Park, operating across breakfast, lunch, dinner, bar, room service and executive lounge service. A back-to-back finalist at the HM Awards, Bacar has received recognition including Chef of the Year in 2024 and the Wine Goblet Award in 2025 from the Australian Wine of the Year Awards. Pullman at Sydney Olympic Park is setting the standard for what hotel dining in Australia can be. We are seeking an experienced and driven Head Chef to join the team and help shape the next chapter of our venue. Working alongside our talented Executive Chef, Marvin Ma, you will play a key role in delivering exceptional dining experiences across our restaurant, events, and hotel operations. As Head Chef, you will play a vital role within the kitchen brigade, supporting and managing the team throughout daily operations. What you’ll be doing: Led and manage daily kitchen service Manage food costs, ordering and inventory control effectively Manage staffing levels and rostering across peak event days Ensuring 5-star food quality across the board Support and guide kitchen staff members, leading by example Maintain high standards of hygiene, food safety, and compliance Qualifications Previous experience in a hotel or high‑volume restaurant environment as a Senior Sous Chef or above Strong leadership and team management skills Ability to work under pressure Strong organisational and communication skills Creative culinary mind, up to date on local and international food trends Ability to work closely with suppliers to source the best quality product Flexibility to work a rotating roaster, including weekends, nights, public holidays and event days Food Safety Supervisor Certification Additional Information Why Join Us?
