Cafe Ambio is proud to be a family run business that boasts 5 successful cafes in the Lake District and Lancashire. We place a strong emphasis on using local wherever possible, from staff, suppliers and produce! The majority of products that we serve are made in our kitchens, by our chefs using our recipes! All of our baristas are highly trained to create the perfect hot beverage.
We are on the hunt for an ambitious individual to come as a Head Chef to join our team and take control of the kitchen at Grizedale Forest. You will need to have a real passion for food and drink, have a good understanding of running a busy kitchen, leading a team, ordering, stock control, working to a G.P, and food hygiene. You will work closely with the Brand Executive Chef to ensure the kitchen meets the brand standard!
This role is perfect for a current head chef looking for a fresh challenge, or a Sous Chef wanting to take the next step in their career.
About the Role:
You will be the Head Chef, taking control of the day to day running of the kitchen along with the Sous Chef and Assistant Chef. You will be responsible for all the orders, cleaning, quality control, training chefs, leading the team and meeting our Brand Standard of food and hygiene quality. We currently boast 5 start food hygiene certificates across all our sites, and this must be maintained. Café Ambio has an Executive Chef that will spend at least one day a week at each Cafe, and you will liaise with the Executive Chef to design new menu’s, seasonal specials, ideas and cakes. We have a GP% target that has a bonus attached when hit. The GP target is based on the cost of the menu, and is easily achievable by reducing waste and controlling portion size. You will work closely with the Cafe Manager to insure that the front of house and kitchen teams work together smoothly. The head chef will act as an ambassador to the business, and we will expect you to develop a strong relationship with suppliers, customers, staff and the directors.
About you:
We would like to have a Head Chef with a strong catering background who is willing to progress further in their career. You should have a passion for the hospitality industry, keeping up with modern trends to enhance our seasonal menus. You will need have good clear communication skills that allow you to be a leader in the kitchen so you can train, manage and motivate the kitchen team to work efficiently and at a consistently high standard. Clear communication will also help ensure the Head Chef and Café Manager work closely together, as well as being able to have a strong relationship with suppliers. You should have a good understanding of menu planning, using local and seasonal products and trying to minimize food waste. You will also need to understand allergens and food hygiene.
About the Cafe:
We are the sole catering operators at the busy tourist destination of Grizedale Forest. The site has Go-Ape, Bike Rental, Bike and Walking routes, and new this year there is the Grizedale Observatory. There is also a small group of handmade craft makers that attract visitors onsite.
We have to manage the expectation of high standard food, served in a timely manner as the visitors often have a tight timescale. Our daily specials are seasonal and should be aimed to hit the target market.
Our hours are 9:30 - 5:30 throughout the summer months, and 9:30 - 4:30 into winter.
The Package:
Salary - £30,000 per annum - negotiable upon experience.
Bonus paid monthly upon meeting GP targets - £200 per month

Company Pension Enrolment
Minimum of 40 hours per week, any 5 days from 7. Must be able to work weekends, bank holidays and school holidays.
Chef Whites Provided
No Restaurant Hours or Split Shifts!
Must be able to drive as we are in a rural location with no public transport. As a Head Chef, you would be expected to drive a company vehicle to and from Backbarrow to transport staff.
No accommodation is available with this position.
