About Us
Freak Scene is a vibrant Pan-Asian restaurant group led by Chef Scott Hallsworth (ex-Nobu), known for bold flavours, creative dishes, and electric service. We are looking for a passionate Head Chef to lead our kitchen at our Balham site. This is a fantastic opportunity for a talented leader with a flair for Japanese and Pan-Asian cuisine to make their mark and drive the success of a growing brand.

The Role

As Head Chef, you will:

  • Lead and inspire a small brigade of chefs, ensuring high standards of cooking, consistency, and presentation across all dishes.
  • Oversee the delivery of exceptional Japanese / Pan-Asian food in line with our brand vision.
  • Manage all aspects of kitchen operations including stock control, ordering, GP targets, and waste reduction.
  • Ensure strict compliance with food safety, health & hygiene, and allergen regulations (Level 3 Food Hygiene required).
  • Recruit, train, and mentor the kitchen team, fostering a positive and professional working culture.
  • Work closely with management on menu development, specials, and seasonal updates.
  • Control labour costs and rota management in line with budgetary requirements.
  • Uphold our high standards of cleanliness, organisation, and kitchen safety at all times.

What We’re Looking For

  • Proven Head Chef (or strong Sous Chef stepping up) experience in a busy restaurant environment.
  • Essential: Japanese or Pan-Asian cuisine knowledge and a genuine passion for creative cooking.
  • Strong background in kitchen management, including leading a small team.
  • Excellent knowledge of health, safety, HACCP, and food hygiene regulations.
  • Financial awareness, with a track record of hitting GP targets and managing costs effectively.
  • A natural leader with strong communication skills and the ability to motivate and develop staff.
  • A hands-on, positive, and resilient attitude with a calm approach under pressure.
