You will run a well organised kitchen and be fully conversant with food control plans, health and safety and hygiene. Responsibilities | Ngā Haepapa Draft concept ideas, plan menus and develop, prepare and produce all recipes, focusing on sustainable and locally sourced produce Estimate food and labour costs Organise the kitchen service operations for the restaurant, conference and room service on a day to day basis so that they run efficiently and productively Monitor quality of dishes at all stages of preparation and presentation Train and develop junior chefs and kitchen assistants Interview and select all new team members Discuss food preparation issues with Managers, kitchen and front of house staff Demonstrating techniques and advising on cooking procedures Prepare and cook food Explaining and enforcing hygiene regulations Be pro-active in estimating and controlling food and manning costs being fully aware of forecasted business and targeted profitability whilst maintaining standards. Order food supplies in line with budgets. Maintain a sound knowledge of the hotel’s procedures for purchasing of food stocks, the control of purchasing levels.
