Head Chef – Jack Gray Café (Grays Point)
Employment: Full-Time (open to Part-Time for the right leader)
Shifts: Day & Evening (Dinner service Friday & Saturday nights only)
Location: 110 Grays Point Road, Grays Point NSW
Jack Gray Café is entering an exciting new chapter, and we’re looking for a Head Chef to lead our kitchen and help shape the next phase of our food offering. If you’re a hands-on leader who loves seasonal menus, tight execution, and building great teams, we’d love to meet you.

About the Role

  • Lead day-to-day kitchen operations across breakfast, lunch, and our weekend dinner service.
  • Own menu development: seasonal updates, daily specials, and consistency of recipes/specs.
  • Drive kitchen standards: food quality, presentation, hygiene, and service timing.
  • Manage ordering, stock control, and wastage to deliver target food GP.
  • Build, roster, and train a small, capable BOH team; coach calmly under pressure.
  • Maintain food safety compliance (HACCP-style practices), cleaning schedules, and logs.
  • Collaborate closely with the Venue Manager and FOH to deliver a seamless guest experience.
  • No late-night finishes – evening service only on weekends.

What We’re Looking For

  • Proven experience in a Head Chef or Senior Sous role in café/bistro-style venues (2–3+ years).
  • Strong leadership with a hands-on approach and high attention to detail.
  • Track record managing COGS, stock, and supplier relationships.
  • Excellent prep planning, section organisation, and service pace.
  • Availability across weekdays and weekends, including Friday & Saturday evenings.
  • Food Safety Certification required; trade qualifications highly regarded.
