JOB OVERVIEW:
We are seeking an experienced and passionate Head Chef / Kitchen Manager to join our dynamic team at Nepean Sailing Club, a popular boating membership facility with over 2000 members and open to the public. The pub-style restaurant known for its hearty, flavorful dishes and welcoming atmosphere. The ideal candidate will be a proven leader with expertise in managing kitchen operations, maintaining high culinary standards, and delivering exceptional food to our guests. As Head Chef, you will oversee the entire kitchen operation, from menu creation to staff management and maintaining the highest standards of cleanliness and food safety.
Key Responsibilities:
- Leadership & Management:
- Lead, train, and manage a team of kitchen staff to ensure efficient and smooth kitchen operations.
- Foster a positive and collaborative work environment, providing support and guidance to all kitchen team members.
- Create weekly schedules, ensuring appropriate staffing levels while managing labor costs.
- Menu Development:
- Collaborate with the management team to create seasonal menus and daily specials that align with the pub’s brand and customer preferences.
- Ensure a variety of dishes that appeal to diverse tastes, with an emphasis on quality, presentation, and cost control.
- Food Preparation & Quality Control:
- Oversee all aspects of food preparation and cooking, ensuring dishes are prepared to the highest standards.
- Maintain consistent portion sizes, food quality, and presentation across all meals served.
o Ability to plan, prepare and execute various food items for onsite catered events.
- Conduct regular quality checks on food items to ensure consistency and safety.
- Inventory & Ordering:
- Manage kitchen inventory and place orders for ingredients and supplies, ensuring the kitchen is stocked and operating within budget.
- Monitor food storage and minimize waste, ensuring all products are used before expiration.
- Health & Safety Compliance:
- Maintain a clean and safe working environment, adhering to all food safety and health regulations.
- Ensure proper food handling, sanitation, and hygiene practices are always followed.
- Conduct regular training on safety, hygiene, and equipment use for all kitchen staff.
- Budget & Cost Control:
- Assist with managing food costs and inventory to ensure profitability.
- Develop and track budgets for the kitchen, implementing cost-saving strategies while maintaining food quality.
- Customer Satisfaction:
- Address customer feedback and concerns related to food quality or service.
- Ensure dishes are served promptly and to the customer’s satisfaction.
Qualifications:
- Proven experience as a Head Chef, Kitchen Manager, or in a similar culinary leadership role, preferably in a pub or casual dining environment.
- Strong leadership, communication, and organizational skills.
- Extensive knowledge of food preparation techniques, kitchen equipment, and health and safety standards.
- Ability to manage multiple tasks simultaneously and work in a fast-paced environment.
- Strong understanding of food costing, inventory management, and budgeting.
- Ability to mentor and develop a team of kitchen professionals.
- Culinary degree or equivalent professional training is preferred but not required.
- A passion for food, creativity, and a commitment to delivering exceptional dining experiences.
- Flexibility to work evenings, weekends, and holidays as needed.
