Job Description Key Responsibilities Wine Program & Curation Develop and maintain an exceptional, globally inspired wine list aligned with each outlet concept (restaurants, bars, banquets). Ensure a balanced portfolio across Old World and New World wines, including premium, rare, and boutique labels. Collaborate with chefs to design wine pairings and tasting menus. Cellar & Inventory Management Oversee procurement, pricing, inventory control, and storage of wines. Maintain optimal cellar conditions and stock rotation (FIFO/LIFO as required). Work closely with procurement and finance for cost control and vendor negotiations. Guest Experience & Service Excellence Provide expert wine recommendations and personalized guest interactions. Lead tableside service for VIPs and high-profile events. Curate bespoke wine experiences, tastings, and masterclasses. Training & Team Development Train and mentor service teams across outlets on wine knowledge, service standards, and upselling techniques. Build a strong wine culture within the team, aligned with luxury service standards. Revenue & Commercial Focus Drive beverage revenue through strategic pricing, promotions, and upselling initiatives. Monitor sales performance, identify trends, and optimize the wine program accordingly. Develop partnerships with wineries, distributors, and sponsors. Compliance & Standards Ensure adherence to all legal regulations related to alcohol service and licensing. Maintain brand standards of Fairmont and Roswyn in all aspects of beverage service. Qualifications Minimum 5–8 years of experience in luxury hotels or fine dining restaurants, with at least 2 years in a leadership role. Recognized sommelier certification (WSET Level 3/4, CMS, or equivalent preferred). Strong knowledge of global wine regions, varietals, and trends.
