Pellegrino 2000, a trattoria-style restaurant by chefs Dan Pepperell and Mikey Clift, and sommelier Andy Tyson, is located in the heart of Surry Hills. We’re looking for experienced Trade Waiters to join our dedicated front-of-house team.
Opened in early 2022, Pellegrino 2000 quickly established itself as a local favourite and one of Australia’s most talked-about restaurants — receiving consistent critical acclaim, packed services, and a reputation for warm hospitality, old-school charm, and technical precision.

REQUIRED SKILLS & EXPERIENCE:

  • At least 2 years’ experience in a similar FOH role at a quality venue
  • Strong working knowledge of food, wine, and/or cocktail service
  • Experience with a la carte dining and fast-paced environments
  • Excellent customer service and communication skills
  • High standards of professionalism and attention to detail
  • Familiarity with POS and reservation systems
  • Availability to work evenings and weekends
  • A passion for hospitality, teamwork, and service excellence

Depending on your experience, the role may involve section management, team supervision, or wine and cocktail service leadership. You’ll be part of a tight, supportive team delivering one of Sydney’s most consistent dining experiences.

KEY RESPONSIBILITIES:

  • Provide confident, professional food and beverage service
  • Manage your own section and coordinate with kitchen and bar teams
  • Offer informed recommendations from the menu and wine list
  • Assist with opening and closing procedures, setups, and turnarounds
  • Ensure all service and hygiene standards are met
  • Support a smooth and efficient service alongside a high-performing team
