Tilda is the recently hatted restaurant by House Made Hospitality, located on the ground floor of the newly renovated Sofitel Sydney Wentworth. It sits as one of four venues within the precinct, and adds to House Made Hospitality’s varied and fast-evolving portfolio which includes Lana, Grana, Martinez and Promenade Bondi Beach. An “Australian Grill”, it aims for exceptional dining with a local and seafood focus, and after only a month in operation, is already buzzing and vibrant - trading all day (from breakfast) and all week.
The restaurant features a 110-seat dining space, including an intimate 12-person private dining room. The thoughtfully curated wine list focuses on Australia’s finest winemakers, regions and varietals, alongside an expertly selected range of old-world wines.
Responsibilities:
ABOUT THE ROLE:
We are looking for a Hospitality and Wine Cellar Manager to join the senior team at Tilda. This leadership role will hold you responsible and accountable for managing the venue’s wine cellar, overseeing both product (wine) and service delivery. You will work closely with the Head Chef and Bars Leader to foster development for both yourself and the team you lead. Your tasks will include:
- Supervising wine service and collaborating with winemakers
- Negotiating with suppliers to renew our selections and achieve better prices
- Participate in daily briefings to deliver wine tasting notes and inform team of stock availability
- Facilitating training Wine Waiters, ensuring proper wine service techniques are applied and knowledge is current
- Advising customers on wine pairing with food, occasion and budget
- Ensure wines are served at the correct temperature and with the corresponding glassware
- Drive venue revenue. Ensure your entire team is equipped with the tools and knowledge to focus on driving sales and enhancing the guest experience.
- Communicate, implement, and monitor venue SOPs, SOS, policies and professional standards.
- Act as an ambassador for wine and beverage within the hotel and build a rapport with guests and visitors.
- Assisting with guest orders and service
- Comply with food and safety hygiene
To be successful in this role you will possess:
- At least 3 years’ experience in similar role in a high-volume restaurant environment
- RSA certification (required)
- Demonstrated understanding of wine – vintages, tastings, storage
- Exceptional communication skills;
- A passion for delivering excellent customer service; Make each guest’s experience special, sharing the stories of the wines, the hotel, and venues when applicable;
- Experience in recruitment, onboarding, and development of the teams especially wine teams.
- Excellent organisational & time management skills;
- A driven & results-focused attitude;
- Sound food & beverage knowledge;
- Strong attention to detail;
- Familiarity with hospitality software programs; and
- Strong leadership, management & motivational skills
