Job Description The Hygiene Manager is responsible for overseeing and maintaining the highest standards of hygiene, sanitation, and safety across all areas of a luxury resort complex, including restaurants, kitchens, guest villas, public areas, staff facilities, and back-of-house operations. This role ensures full compliance with international hospitality standards, local Maldivian regulations, and brand requirements, while delivering an exceptional and safe guest experience. Key Responsibilities Hygiene & Sanitation Management Develop and implement comprehensive hygiene and sanitation programs across the resort Ensure all areas (kitchens, restaurants, bars, villas, spa, laundry, staff housing) meet luxury hygiene standards Monitor daily cleaning and disinfection procedures Oversee chemical usage, storage, and safety practices Food Safety & Compliance Lead and maintain HACCP-based food safety systems Ensure compliance with international standards (HACCP, ISO 22000) and local regulations in the Maldives Conduct regular internal audits and inspections Liaise with external auditors and government authorities Training & Development Conduct hygiene and food safety training for all staff, including kitchen, housekeeping, and service teams Develop SOPs (Standard Operating Procedures) and ensure consistent implementation Promote a culture of hygiene awareness across all departments Quality Assurance & Audits Perform routine inspections of all outlets and facilities Identify risks and implement corrective and preventive actions Maintain detailed documentation and audit reports Monitor supplier hygiene standards and delivery practices Pest Control & Waste Management Manage pest control programs in coordination with external contractors Oversee waste segregation, disposal, and environmental practices in line with sustainability goals Ensure compliance with eco-friendly and island-resort waste management systems Cross-Department Coordination Work closely with Executive Chef, Housekeeping, Engineering, and HR teams Support pre-opening hygiene setup (if applicable) Participate in crisis management (e.g., outbreaks, contamination incidents) Qualifications Bachelor’s in Food Science or Food Technology or Bachelor’s in Microbiology. Certification in HACCP, ISO 22000, or Food Safety Management Systems. Minimum 3–5 years of experience in hygiene, food safety, or quality control (hotel or resort experience preferred). Strong knowledge of international health regulations and international food safety standards. Experience in audits, inspections, and compliance reporting. Good understanding of cleaning chemicals and sanitation procedures. Ability to train and guide team members on hygiene practices. Strong communication and reporting skills. Handle internal and external food safety audits. Good computer skills (Excel, reporting tools)Flexibility to work shifts if required. Strong leadership and team management ability.
