Ability to make a difference through our Corporate Social Responsibility activities, like Green Key What you will be doing: Working 40 hour week (shifts work) 5 days over 7 days. Reporting to the Head Chef and Senior Sous Chef within a strong team. To be fully aware of the preparation and service of all dishes on the hotel menus. To prepared to adapt and present dishes on according to customer requirements. To ensure mis en place is carried out throughout the kitchen to meet forecasted demand. To record temperature checks on food and in storage areas as directed to ensure statutory requirements are met and report any variances are rectified immediately. Understand and ensure the Food Safety Management System and HACCP are followed to the letter. Be the go-to Kitchen Manager for Environmental Health Inspections. Using the Riskproof platform supported by Shield Safety Group. To assist with the training of and supervise other members of the kitchen brigade. To assist with quality control and menu planning where appropriate. To be aware of product cost and kitchen gross profit targets. To assist with the ordering of food and materials as required following company procedures. Take the lead on Stock Controls using the LogOnn system supported by a monthly stock audit with Stock Check UK. To be fully aware of and strictly observe Food Safety regulations and requirements. Actively share ideas, opinions and suggestions to improve the environment and menus. Ensure the consistency in the preparation of all food items for a la carte and/or buffet menus according to property recipes and standards. Communicate effectively with the rest of the team and thrive for guest feedback. Bringing previous kitchen experience and Food Preparation qualifications, you’ll train our chefs, handle stock, order it, and cut down on wastage. Naturally, the ability to cook with flair and imagination is paramount. Ideally from a hotel background you will have experience of catering for large conference and events including weddings and bespoke private functions. Previous experience in a similar position is essential. Qualifications Your experience and skills include: At least a year under your belt managing a kitchen. Ability to work well under pressure in a fast paced environment. Ability to work cohesively and collectively as part of a team.
