Responsibilities

You’ll be a hands-on junior leader who can run a section and set standards. On any given service you will:

  • Lead a section and keep plates consistent to spec and timing.
  • Prep daily: stocks, sauces, reductions; fish filleting, basic butchery; garnish and service mise en place.
  • Plate accurately and maintain presentation standards in line with Cavallo’s style.
  • Support the Head Chef/Sous on the pass when required and help manage ticket flow.
  • Train and coach CDPs/commis; give clear briefs and feedback.
  • Contribute ideas for specials and new menu development (seasonal Italian focus).
  • Manage ordering, rotation and waste control; hit GP targets without compromising quality.
  • Work closely with FOH to deliver a smooth, guest-first service.
