About this opportunity:

We are seeking a motivated and experienced Junior Sous Chef to join our world-class culinary brigade who thrive on a positive team culture and innovation. Our Junior Sous Chef, in conjunction with the Executive Sous Chef and Chef de Cuisine, supervises and manages all aspects of the preparation of food catering, while keeping with our standards of food quality and ISO 22000 food safety compliance. Key responsibilities include:

  • Effectively lead and oversee team member management within the Events and Retail kitchen.
  • Deliver a high standard of preparation for all events and manage teams in several sections simultaneously.
  • Assist with schedules, rostering and food preparation at our world-class standards.
  • Ensure strict food safety standards, preparation, presentation and cooking techniques are established and monitored to meet ICC Sydney Brand Standard guidelines and maintained at that level.
  • Embrace our Feeding Your Performance philosophy with a focus on fresh, seasonal, and local artisan produce.
  • Lead, motivate and engage team members to ensure a high-performance culture.
  • Effectively manage the day-to-day operation of the Events kitchen, and have basic knowledge of food cost, portion control, labour cost, productivity, and wastage.

Required Skills & Experience:

  • Experience in a similar role within a high-volume environment.
  • Current working knowledge of the hospitality, convention, and exhibition industry.
  • Ability to communicate clearly and concisely.
  • Adaptable to changing situations while maintaining the highest quality of product and other established standards.
  • Ability to work with minimal external assistance.
  • True passion for food and an unrelenting drive to provide exceptional event guest experiences.
  • An ability to maintain safety standards and to abide by HACCP.
  • Certificate III in Commercial Cookery.
  • Valid working rights in Australia.
  • You must be 18 years or over.
