Responsibilities
  • Assists the Chef de Cuisine and Executive Chef in supervising all Kitchen ‘FIVERs,’ ensuring the Team consistently delivers Exquisite Culinary Creations in line with FIVE’s Standards.
  • Holds regular Meetings with the Kitchen Team to share Insights from Chef meetings, discuss any operational issues, and ensures a ‘FIVE-Star’ Standard of Communication across the entire Department.
  • Attends daily Meetings with the Executive Chef, Executive Sous Chef, and Senior Chefs to discuss Updates and plan Bespoke Culinary Experiences.
  • Monitors Food Spoilage, ensures Regular turnover of stock, and Promptly informs the Executive Chef or Executive Sous Chef of any Concerns to maintain Ingredient Quality.
  • Oversees daily Food Preparation, individual costs, quality checks, inventory levels, and portion control to maintain Remarkable Consistency and High Standards.
  • Personally manages the Hot Plate during service periods, assisting where necessary to Guarantee that both the Presentation and Quality of dishes meet FIVE’s Award-Winning Culinary Benchmarks.
  • Inspects Food Storage and Refrigerated Areas meticulously Four Times Daily, recommending Proper storage methods and ensuring Compliance with First-in-Class Health and Safety Regulations.
  • Conducts comprehensive Training Sessions and Briefings on the correct use of kitchen equipment and machinery, ensuring that all ‘FIVERs’ perform tasks in accordance with established Protocols.
  • Establishes and upholds Luxury Culinary Standards, ensuring FIVE’s reputation for ‘FIVE-Styled’ Cuisine remains Sensational.
  • Plans menus and compiles Curated recipes for Tasting Sessions, securing approval from the Executive Chef or Executive Sous Chef to offer Guests a Lavish Dining Experience.
  • Liaises with the Purchasing Department to ensure that only Exquisite Ingredients are sourced, continually seeking out New and Superior quality produce.
  • Develops Internal Processes to Guarantee Consistency in food preparation, and provides the Kitchen Team with tools to maintain Next-Level standards across all operations.
  • Stays informed about Market Trends in Food and Beverage, using this knowledge to enhance Guest experiences and introduce Bold new culinary techniques.
  • Monitors the competitive landscape, keeping abreast of Disruptive industry trends, techniques, and innovations to continuously Elevate FIVE’s Culinary Offerings.
  • Maintains Accurate Records, documentation, and checklists for control purposes, ensuring Operational Standards are Meticulously followed.
  • Ensures all points listed in the Daily Logbook are executed, including mise en place and specific instructions, to guarantee Seamless kitchen operations.
  • Adheres to Dubai Municipality and HACCP regulations, keeping documentation Updated and the Kitchen Audit-Ready at all times.
  • Maintains a Supportive Kitchen Environment by being attuned to the FIVE Tribe’s Vibe, fostering professional Growth and ensuring the Well-Being of all ‘FIVERs.’
  • Upholds high standards of Personal Hygiene among Kitchen ‘FIVERs,’ adhering strictly to all Health and Safety requirements.
