COMPANY OVERVIEW

Hurley House Hotel is a multi-award-winning venue, set in a countryside location near Maidenhead, Henley, Marlow, and beautiful surrounding villages. We pride ourselves on creating unforgettable experiences for our guests.
We are looking to recruit an experienced Junior Sous-chef Japanese cuisineon a full-time basis. If you have experience in Japanese cuisine with a strong knowledge and mastery of sushi/sashimi and hot section, we would love you to join our like-minded team.
We are offering a competitive salary of £40,000 per annum plus share of customers’ gratuities, for a 5 days/week shift system including weekends and bank holidays. We are also offering six weeks’ free accommodation or £2,000 for relocation expenses.

Responsibilities

Execute flawless sushi, sashimi, maki and lead the hot section (grill and tempura), following our recipes
Prepare appetisers and salads
Develop new Japanese seasonal dishes and specials
Manage food prep activities, including butchering and ageing of fish, as well as preparing premium seafood to the highest standards
Run the pass in the Head Chef’s absence, ensuring seamless service flow
Coordinate with our front of house staff to ensure proper understanding of the dishes, considering special requests and food allergies
Implement cost control practices and ensure minimum kitchen wastage
Perform any other reasonable duties required by the Head Chef
