At The Ritz-Carlton, Melbourne, pastry is not just a course - it’s a statement of craftsmanship. We are seeking an experienced and passionate Junior Sous Chef (Pastry) to help co-lead our pastry team in delivering exceptional desserts for both intimate fine dining and large-scale luxury banquets, on a Full-Time basis.

Responsibilities

WHAT YOU’LL DO:

  • Support the Pastry Sous Chef in overseeing the pastry kitchen’s daily operations
  • Take the lead in plated dessert and banquet menu development, ensuring elegance and consistency in every service
  • Demonstrate mastery in working with chocolate, including tempering and artistic presentation
  • Manage, train and guide a large and diverse team, fostering a culture of excellence and collaboration
  • Uphold rigorous food safety, allergen management, and hygiene standards
  • Collaborate cross-functionally with Banquets and Culinary teams to deliver flawless guest experiences
  • Maintain inventory, support cost control and manage high production volumes
  • Participates in department meetings and continually communicates a clear and consistent message regarding the departmental goals to produce desired results
  • Supports and assists with new menus, concepts and promotions for the Restaurant outlets and Banquets.
