Description
The Lead Baker is responsible for planning, preparing, and baking high-quality breads, pastries, and desserts, while strictly adhering to nutritional standards, dietary restrictions, and food safety regulations. They lead the baking team, manage inventory, ensure proper sanitation, and maintain equipment. Starting Salary is $18-$20 a hour.   * Prepares, produces, and bakes breakfast pastries, breads, rolls, and some desserts. * Develops new products for a la carte or menus on a rotating basis. * Decorates baked goods using a pastry bag. * Sets time and speed controls for mixing machines, or blending machines, so that ingredients will be mixed or cooked according to instructions. * Measures or weigh flour or other ingredients to prepare batters, doughs, fillings, or whipped cream, using scales or graduated containers. * Prepare garnishes as needed for baked goods. * Maintains adequate supply of all prepared products on hand and ensures the proper storage and refrigeration. * Keeps spoilage/waste to a minimum by ordering and utilizing proper quantities and rotating products. * Lines up baked products in mobile carts according to the needs of the particular outlet or function. * Utilizes any and all leftovers into usable products. * Cleans, breaks down, and puts away all baking equipment including: ovens, mixers, proofer, floors, freezer, and refrigerators. * Responsible for acting in conformance with all facility and departmental policies and procedures including those relating to Human Resources, Code of Ethics and Business Conduct, Health and Safety regulations, Compliance requirements, Patient Rights, Confidentiality, and HIPAA. Responsible for acting in conformance with accrediting agency standards. * Attend department meetings as required. * Demonstrates accountability to accept responsibility for personal/professional growth and any required certification/licenses, if applicable. * Completes mandatory training and competencies annually. * Adheres to all policies and procedures specific to the assigned work account. Qualifications * High school diploma or GED–is this a requirement for all locations? * Minimum two (2) years of baking experience * Demonstrated knowledge of and skill in ability to safely and effectively operate standard foodservice equipment * ServSafe certified or obtained within the first three months of employment.
