Position: Lead Sushi Cook
We are currently seeking a Lead Sushi Cook to take charge of kitchen operations, lead by example, and ensure the highest standards of sushi preparation. This is a hands-on role for someone experienced, organized, and passionate about Japanese cuisine.

Responsibilities:

  • Prepare and assemble sushi rolls, sashimi, nigiri, poke bowls, and other menu items with precision and consistency.
  • Handle and fillet whole fish into sashimi-grade portions following restaurant standards.
  • Monitor food quality and freshness, ensuring only top-grade ingredients are served.
  • Maintain cleanliness and organization of the workstation in compliance with Alberta Health Services regulations.
  • Follow safe food-handling, storage, and rotation practices.
  • Support ordering, receiving, and stocking of seafood and dry goods.
  • Assist in tracking inventory and minimizing waste.
  • Ensure timely preparation and accuracy of all customer orders.
  • Provide a positive dining experience through attention to detail and presentation.
  • Learn and apply all restaurant recipes and contribute creative input to seasonal menu updates.

Requirements:

  • Minimum 1–2 years of experience as a sushi cook or in Japanese cuisine.
  • Skilled in cutting and preparing raw fish for sushi and sashimi.
  • Valid Food Handler Certificate (mandatory).
  • Knowledge of food safety standards and HACCP principles.
  • Ability to work efficiently in a fast-paced kitchen, including evenings and weekends.
  • Team-oriented, reliable, and attentive to detail.
  • Creativity and passion for Japanese/fusion cuisine is an asset.
