QUALIFICATIONS & CERTIFICATIONS

· 2+ years of experience in a professional kitchen
· Passion for Italian cuisine and culinary excellence
· Strong knife skills and understanding of classic cooking techniques
· Calm and efficient under pressure with a positive attitude
· Available evenings, weekends, and holidays

JOB REQUIREMENTS & COMPETENCIES

  • Flexible hours (with overtime as required), including afternoons, weekends, and as required for catering / special events
  • Interaction with employees and management team
  • Attendance and participation in meetings as required
  • Ability to use all kitchen equipment – stoves, ovens, fryers, grills, dishwashers, etc.
  • Must be physically able to stand on feet for long periods of time
  • Must be physically able to lift, push, and pull up to 50 lbs.
  • Ability to work as part of a team to achieve and exceed goals
  • Ability to remain calm and work under pressure
  • Ability to manage time, prioritize, and multitask
  • Strong communication skills – both verbal & written

Responsibilities
  • Prepare and execute dishes with attention to detail, flavour, and presentation
  • Set up and stock your station with all necessary prep and ingredients
  • Ensure food is prepared in a timely manner and meets Mezzo’s high standards
  • Maintain a clean and organized workstation, adhering to all food safety standards
  • Work collaboratively with the Executive Chef, Sous-Chef and fellow team members
    Food Handling
    · Follows kitchen & restaurant standards, recipes, procedures, and policies
    · Assists in preparing and cooking meals for daily restaurant operations, catering, special events, etc.
    · Prepares stocks, soup, sauces, and other tasks and recipes as assigned by direct reports
    · Prepares produce and food service items for daily menu and special events.
    · Assists in food delivery for catering or cooking at special events as assigned (i.e. corporate BBQs, etc).
    Safety
    · Follows all safety standards in the kitchen
    · Wears appropriate personal protective equipment and uniform as required (ie. hair net, gloves, etc.)
    · Promptly reports any and all accidents, injuries, and/or safety hazards
    · Ensures all health and safety regulations are adhered to
    Inventory & General
    · Assists in conducting inventory counts as assigned
    · Maintains and cooperates with all security procedures with respect to kitchen and restaurant inventory
    · Maintains a clean and sanitary work space (including both the kitchen and storage areas)
    · Maintains confidentiality as it relates to “trade secrets”, including all recipes learned and developed at Mezzo Ristorante & Lounge
