PRINCIPLE RESPONSIBILITIES/POSITION PURPOSE:
Responsible for maintaining and setting up Hanagi food production and quality control of all meat, fish, sauces, stocks, seasoning and assist with Sushi items prepared in the different kitchen stations if necessary. Oversees kitchen operations as well as manages cooks.
ESSENTIAL FUNCTIONS:
- Prepares all food items according to standard recipes or, as otherwise specified by Chef, to ensure consistency of product to the guest; requires transportation of heavy food products. Produce all items needed for work area, including traditional Japanese Cuisine and sushi if necessary, while ensuring items are in accordance with specifications and standards of the recipes, while maintaining safe and sanitary workspace and adhering to health standards.
- Train, supervise and monitor team performance, product quality and production flow; foster continuous improvement where necessary.
- Keeps all refrigeration, storage, and working areas clean, working condition in order to comply with Health Department regulations. Checks and controls the proper storage of product, especially on all fresh produce, checking on portion control, to maintain quality product.
- Ensures that all equipment in working areas is clean and in proper working condition to comply with Health Department regulations.
- Visually inspects, selects and uses only the freshest fruits, vegetables, meats and other food products of the highest standard in the preparation of all menu items. Reads and employs math skills for following recipes. Prepares requisition for supplies and food items for production in workstation.
OTHER DUTIES:
Assimilate into Anaheim Majestic Garden Hotel culture through understanding, supporting and participating in all elements of exceptional service. Demonstrate working knowledge of the service standards.
Regular attendance in conformance with the standards, which may be established from time to time, is essential to the successful performance of this position. Due to the cyclical nature of the hospitality industry, employees may be required to work varying schedules to reflect the business needs of the hotel.
In addition to performance of the essential functions, this position may be required to perform a combination of the following supportive functions, with the percentage of time performing each function to be solely determined by the supervisor based upon the particular requirements of the company.
- Answer, report and follow Chef or Sushi Chef’s instructions
- Actively display knowledge of all food and beverage menu items and current promotions

- Complete all assigned daily, weekly and monthly cleaning duties
- Complete opening and closing duties efficiently and safely, using the correct procedures
- Create connections with each guest in a friendly, professional and caring manner
- Create high quality sushi including cooking rice, rolling sushi, temperature recording, cutting and packaging for take-out and dine-in plate preparation
- Ensure all operating standards including food safety and quality are strictly adhered to
- Keep floors dry and clean to avoid slip/fall accidents Maintain cleanliness and organization of sushi station
- Maintain daily production records Order and receive raw materials and dry goods
- Perform monthly inventories and training of new teammates as required Performs any general cleaning tasks using standard hotel cleaning products as assigned by supervisor
