As the head of our pastry department, you will be responsible for creating exceptional desserts, managing a team of skilled pastry chefs, and elevating our culinary offerings to new heights. Plan, prepare, and execute all pastry and bakery items across outlets (buffet, à la carte, banquets, in-room dining). Design and implement innovative dessert menus, seasonal specials, and showpieces. Supervise daily production and ensure timely, efficient, and high-quality output. Ensure proper storage, freshness, and consistent quality of all baked goods and ingredients. Collaborate with the Executive Chef on menu planning and costing. Lead, train, and develop the pastry and bakery team including Pastry Sous Chef, Chef de Partie, and Commis. Schedule and manage the team to ensure smooth operation and workload distribution. Conduct regular training sessions to enhance skills, creativity, and hygiene practices. Foster a positive and professional kitchen environment. Ensure all pastry and bakery products meet presentation and taste standards. Enforce strict hygiene, sanitation, and HACCP standards throughout the pastry kitchen. Conduct regular quality checks on raw materials and finished goods. Qualifications Minimum 5-7 years of experience in high-end pastry kitchens, including leadership roles Advanced skills in pastry techniques, chocolate work, sugar art, and baking Proven ability to develop innovative menus and create visually stunning desserts Strong leadership and team management skills Excellent knowledge of food cost control, budgeting, and inventory management Proficiency in culinary software and modern kitchen equipment In-depth understanding of food safety standards and current ServSafe certification Expertise in Middle Eastern and international pastry traditions Knowledge of dietary restrictions, allergen management, and alternative baking methods Ability to work in a fast-paced, high-pressure environment Strong communication and interpersonal skills Job-Category: Culinary Job Type: Permanent Job Schedule: Full-Time
