Niku X is a contemporary Japanese yakiniku buffet located in the Wilshire Grand Center in downtown Los Angeles. The first U.S. restaurant to offer a fresh A5 Wagyu and seafood buffet, Niku X pairs unlimited premium Wagyu, seafood, sushi, and signature dishes with a curated bar program featuring craft cocktails, sake, and wine. GUEST EXPERIENCE AND SERVICE LEADERSHIP
- Serve as the primary host and brand ambassador, delivering an impeccable welcome and farewell ritual for every guest.
- Manage guest relations at the highest level, personally handling VIPs, critics, celebrities, and loyal patrons with discretion.
- Anticipate guest needs, preferences, and unspoken cues, orchestrating every detail from greeting to seating to departure.
- Resolve any issues swiftly, with grace and authority, ensuring that service excellence is never compromised.
- Direct the dining room atmosphere, maintaining the proper pace and flow of service in harmony with the kitchen.
Dining Room Operations and Flow Management
- Oversee and direct all front-of-house operations during service, ensuring precision, timing, and synergy between kitchen and dining room.
- Manage reservations and guest lists, balancing exclusivity with accessibility; protect table allocation strategy to maximize both revenue and prestige.
- Control pacing and rotation of tables to ensure the chef’s menu is delivered under optimal conditions.
- Monitor floor activity constantly, adjusting staff deployment to maintain smooth service.
- Ensure readiness of dining room environment (lighting, music, table settings, host stand) before every service.
Leadership and Team Development
- Lead, mentor, and inspire hosts, captains, servers, and floor staff in Michelin-standard service culture.
- Conduct daily pre-service briefings to align the team on VIPs, menu changes, service choreography, and standards.
- Train hosts and junior staff in guest recognition, reservation etiquette, and refined hospitality rituals.
- Model emotional intelligence, calm under pressure, and professional authority, setting the standard for the entire team.
- Collaborate with the Executive Chef and General Manager to unify front- and back-of-house objectives.
Standards, Rituals, and Excellence
- Uphold and enforce the restaurant’s uncompromising standards of hospitality, etiquette, and presentation.
- Maintain guest records and build long-term relationships, remembering preferences and anticipating future needs.
- Oversee ambiance details (uniforms, service language, guest flow, table spacing) to reflect fine-dining polish.
- Conduct constant quality checks, discreetly correcting details without disrupting guest experience.
Administrative and Strategic Duties
- Manage reservations platform, guest profiles, and VIP tracking with utmost discretion.
- Report daily service feedback, guest insights, and operational notes to ownership and management.
- Assist in curating special events, private dining experiences, and collaborations with luxury partners.
- Support recruitment, selection, and onboarding of front-of-house staff
- Monitor industry trends, competitor standards, and global hospitality benchmarks to sustain elite status.
