Department of Food Science (FOOD) at Faculty of Science, the University of Copenhagen, is looking for a highly motivated and technically skilled staff scientist for the execution of mass spectrometry analyses starting from 1 November 2025 or as soon as possible hereafter. The position is limited until 31 December 2027. The position will be associated with the Food Proteins research group (led by Professor Marianne Nissen Lund) and the Novo Nordisk funded challenge project SEEDFOOD: Functional and palatable plant seed storage proteins for sustainable foods.

ABOUT US

The Food proteins group aims to develop an in-depth mechanistic understanding of complex interactions of food components, which will make it possible to predict, control, and modulate the chemical reactions taking place in food and beverages during production and storage. We have special emphasis on protein quality and protein modifications induced by the Maillard reaction (i.e. protein glycation), oxidation, and reactions with polyphenols, and how these reactions affect flavour, protein structure and functionality, nutritional value and health. In the context of the announced position, we aim to strengthen our expertise in chromatography and mass spectrometry to study protein chemistry in a food science context.
The successful candidate will work in a highly cross-disciplinary team that includes expertise in the areas of food chemistry, protein (bio)chemistry, and advanced multivariate data analysis (approximately 20 people).

Responsibilities

Your tasks will include:

  • Run state-of-the-art LC-MS and HPLC platform for measurements of food samples.
  • Design and conduct experiments with the LC-MS platform and analyze the acquired data.
  • Support of group members, contributing to creating a collaborative and inclusive research environment.
  • Software control for data acquisition and analysis.
  • Coordinate with academic and industrial research partners.
  • Help with teaching and supervision of students.
