Colossus’ Bakery Commissary in Anaheim, CA is looking for one EXPERIENCED baker to join our passionate morning bakery team!
Our ideal candidate is a self-starter, motivated, and hard-working. This opening is for our morning bakery team, applicants must have experience working in a fast-paced kitchen environment and be available to work shifts 8 hour shifts ranging from 2 AM-11 AM daily.
Our morning bakers start early and are responsible for proofing, baking and finishing all of our house croissant pastries, scones, cookies and artisan sourdough breads. Our mixers are responsible for mixing our house sourdough breads in addition to baguette, challah, danish rye + focaccia. All morning bakers contribute to the shaping of our sourdough loaves, experience with high hydration sourdough is a huge plus!
Basic knowledge of fermentation, proofing and mixing practices are essential and a passion for breads and pastry is a must!
We will train the right applicants, but you MUST have at least some professional kitchen experience. Experienced bakers are preferred.
Baking is physical, you must be able to easily lift 50 LB and be able to stand for extended periods of time.

Responsibilities

  • Weigh and measure ingredients accurately, knowledge of metric system (grams and kilos)
  • Proofing and baking of pastries and croissants
  • Mixing, Shaping + Baking of artisan sourdough bread
  • Knowledge of and experience dough handling
  • Experience monitoring dough fermentation and proofing temperatures
  • Inventory control, quality control
  • Proper cleaning and sanitation standards

Qualifications

  • Attention to detail in all aspects of baking
  • Dedicated to working as a team towards one goal
  • 1 + year professional cooking or baking experience or culinary school equivalent
  • French pastry and bread experience is helpful
  • Must be able to receive regular constructive feedback and adjust to the needs of the bakery and team
