As Restaurant Manager – Nobu, you will be accountable for the end‑to‑end performance of the restaurant, leading a high‑performing front‑of‑house team in partnership with the Chef de Cuisine. You’ll deliver a world‑class guest experience while driving commercial results in a fast‑paced, high‑profile environment, hosting VIPs, celebrities, and Crown’s most valued guests. In this role, you’ll provide joyful dining experiences through your genuine care for guests. As well as: Lead the end‑to‑end operation of Nobu Sydney, ensuring world‑class service delivery aligned to Nobu and Crown brand standards Own the restaurant’s P&L, including labour, beverage cost control, revenue performance and forecasting Build, lead and develop a high‑performing front‑of‑house leadership team, fostering strong culture, engagement and succession Be a high‑visibility leader on the floor, particularly during peak service periods and VIP dining moments Partner closely with the Chef de Cuisine to ensure seamless service flow, menu execution and guest experience Deliver consistent, refined service for a global, discerning clientele, including VIPs and repeat guests Drive continuous improvement initiatives that elevate service, efficiency and guest satisfaction About you You are a polished, confident hospitality leader with a proven track record in premium or fine‑dining restaurants, ideally within luxury hotels or high‑profile standalone venues.
